Thyme, bay leaf, white pepper sublimated by blackberries and crushed strawberries, Palate: Full, velvety, black and red fruits combine with Mediterranean flavors…. The aging brings a smoky and chocolaty touch, supported by a dense and floral fresh juice.

Description: mechanical night harvesting. Each grape variety is vinified separately. De-stemming, pneumatic pressing by parcel, selection of the juices. The wine is matured in stainless steel tanks, only 6% goes into new barriques for 1 year.
Tasting notes: Colour: Ruby red, almost purple. Nose: Charming and spicy, with Espelette Espelette chilli and roasted pepper are supported by redcurrant and wild strawberry. With lovely mellow tannins, it is full on the palate, with notes of pepper and black fruit. On the finish, clove and menthol add a delicate, charming touch.
Food and wine pairing:Sauce, olives, pesto, risotto, grilled meats, sun-dried tomatoes, farm-raised chicken….

Description: Pretty garnet red black robe with purple highlights.

Description: Vinification takes place in traditional tanks, where fermentation and maceration last about 15 days, with the marc cap submerged. The fermentation temperature is regulated between 23 and 25 °C. Aging in tank for at least 1 year with careful oxidation.
Tasting notes: The colour is an intense red. The nose is strong and pleasant with toasted notes. The palate is balanced, silky with discreet but present tannins. The toasted, peppery and ripe fruit notes typical of St Georges wines can be discerned
Food and wine pairing: A strong wine full of character that goes best with meat with sauces, game, grilled meat and cheese. Drinking temperature: 22 °C, can be poured into a carafe so that it can fully develop. Can be stored for at least 5 years.
Vignerons du Chevalier Georges: Ocre Rouge Prestige

Description: Low yield 35 to 45 hectolitres per hectare. The vineyards are strictly controlled and only the grapes from these vineyards will produce this great wine.
Tasting notes: dark red colour with violet reflections. The nose is spicy with smoky and grilled aromas typical of the St Georges d’Orques terroir. The palate is powerful, with volume and fat with a good structure on the finish. The tannins present are melted and elegant. It has notes of red fruits with peppery and spicy aromas. You can also pour it into a carafe, which gives it its full expression.

we select the smallest and ripest grapes.
Syrah and Mourvèdre are vinified separately,
The vinification is controlled by the tasting of each tank. We strive for materiality, creaminess and a long finish. Some délestages with stirring in tank for the two grape varieties and pigeages for the Mourvèdre. Maceration for one month.
Maturation: 12 months in tank.
Orange-red, calcareous clay soils with small pebbles formed from limestone with limestone layers. These balanced and naturally well-drained soils provide the vines with an ideal water supply.
Royat and gobelet pruning, trellis training.
Natural greening in winter on the stony slopes of Montpellier, light ploughing in spring. 4 to 5 treatments and powder.
Tasting notes: A sparkling ruby red robe. The attack is full-bodied but velvety, with creamy tannins and all finesse. Each grape variety is respected and leaves its mark: aromas of blueberry, dried fruit, spices and mocha.

Description: The grapes are harvested by hand, Syrah and Grenache are vinified together. Very gentle separation from the marc to retain the fruity notes. Control of winemaking through tasting. Three weeks of maceration.
Aging: 12 months in tank
Tasting notes: The character of the Languedoc is evident in this new vintage: a wine of pleasure, of exchange. This wine reminds of small, fresh fruits, currant and cherry. A soft texture in which the matter is present without intrusive tannins. An irresistibly fresh finish with a surprisingly lingering aftertaste.

Description: A unique and historic wine. 1st historical reconstruction of an identical wine, unique in France and Europe.
This is the wine of St Georges d’Orques in its original form, the result of a mass selection (no clones) and a completion of the 12 grape varieties that made it up in 1710 (which disappeared after the phylloxera plague), harvested and vinified in a single tank. The plot is located at a slight altitude on a terroir of limestone with limestone gravel. This soil is very distinctive and gives the wine a dense framework of great class and the ability to age for a long time, like the Burgundian Grands Crus.
Tasting notes:
The very original nose surprises with a palette of small wild red fruits (guigne, sour cherry), flowers (rose, peony and violet) and spices that give it a southern touch. The pure, dense mouthfeel with chiselled flavours and a penetrating and graceful fluidity is airy, as it has a lighter alcohol content than today’s wines.
Its tannins are crisp and silky.
Food and wine pairing: It is very versatile, respecting the delicacy of a braised veal, merging with the tenderness of a matured cut of beef, awakening the discretion of a poultry with its chiselled and concise character, crossing blades with a pigeon or a leg of wild boar, slipping into the delicate and fragrant flavours of a lamb tagine… It’s up to you to find the right combination with cheeses it doesn’t fear!

Description: The grapes were harvested by hand in small crates and destemmed before being put into raw concrete tanks. Extraction of the phenolic substance with daily pigeages. Matured for 14 months in French oak barrels.
Tasting notes: An intense purple colour. The nose gradually opens up with harmonious combinations of dry and ripe fruits and additional spices that so often characterise the typical Grès de Montpellier. You can find these flavours in the solid, slightly woody taste. An intense, elegant wine, long and well balanced, which gains in quality when kept in a carafe.

Description: Monica is a confluence, “El Encuentro”, of exceptional climatic conditions that allow the grapes to concentrate naturally through the action of wind and sun. The grapes are harvested by hand and by successive sorting. The harvested grapes are destemmed. The mash is stored in tanks for 10 days, then drawn off. The run-off wine finishes its fermentation in the barrel and stops naturally. Matured for 24 months in barriques.
Tasting notes: A beautiful dark robe with a deep violet shimmer. Powerful fragrance, carried above all by notes of red and dark berries. Full-bodied palate characterised by a beautiful interplay between fruitiness and elegance and crowned by a light coffee note.
